I just wanted to say I can't thank you enough for the help you've given me on my journey from food and weight obsession to that of peace, health, and wellness. For years I suffered from disordered eating patterns and debilitating digestive issues. I was trapped in a prison that I didn't know how to get out of. I have been eating a low fat, whole foods, SOS free plant based diet for over a decade now. Previously, I had been eating a SAD diet and was struggling to try to “eat intuitively” (aka “micro-managing and over-thinking my hunger cues”). When I learned to eat a very healthy, plant based diet, I felt freed from addictive responses to food, and I knew I had found the answer to the question of what to eat. However, my previous attempts of controlling my eating and food during my SAD days continued to haunt me and I felt unsure of how to eat. I know that sounds ridiculous, but I just didn’t know how to eat without anxiety about when and how much I should eat, and I felt frustrated and confused as I watched my children eat their healthy, whole plant foods with no anxiety or restraint or conscious consideration of when and how much to eat.

My HCNC personality (Hyper Conscientious Nut Case) led me to fall into a destructive pattern of overdoing veggies (sometimes eating as much as 10+lbs of veggies per day), fearing weight gain (despite always being quite thin), and eating just one huge meal each night before bed. I preferred to eat just one huge meal each night than to have to face making eating decisions all day long. I had tried to break out of this OMAD pattern several times on my own, but the anxiety of feeling I didn’t know “how” to eat, stress from over-thinking my hunger/fullness cues, and fear of being out of control and endlessly gaining weight led to me falling back into the OMAD/veggie overload pattern over and over again. Several months ago, my gut, mind, and heart finally rebelled, and I knew I needed to make some changes.

Despite my previous failures at change, I was determined to try again. I read books (Breaking out of Food Jail by Jean Antonello was very helpful), listened to Doug Lisle talking about trusting our body’s innate ability to control our desire for food, and I discovered Justina’s videos after watching her interview with Chef AJ. Her message instantly resonated with me, and I binge-watched her videos as I began stepping out in faith and forcing myself to change my eating patterns. I decided on a few ground rules: I would eat 3+ meals during the daytime hours, I would eat until I didn’t want any more food (ie. totally satisfied…body, mind, soul), and I would stop weighing/measuring myself. Justine’s videos gave me the courage to trust the process.

As I began making changes, I struggled hugely with anxiety and doubt (my poor husband was doing his best to encourage me and cheer me on!) and I was white-knuckling it to stay consistent. I saw many areas of my health and life improve within weeks of trying to change my eating pattern, but my daily IBS symptoms and anxiety were becoming intolerable.

I finally emailed Justina with some questions and concerns and received a generous reply from her. I immediately felt understood and, after a few more emails, I knew I would benefit greatly from chatting with her via Zoom and scheduled a session with her.

During our meeting, after listening to my current struggles and sharing more with her about my current eating pattern, Justina encouraged me to drastically reduce my veggies, and to consider raising the calorie density of my diet. She also encouraged me to trust my hunger and fullness cues and explained to me that they were not broken, and I didn’t need to “measure” them and micromanage or over-think them like I’d been trained to do by so many intuitive eating programs. I didn’t need a “hunger scale”. She encouraged me to trust that if I had any desire to eat whole healthy foods (ie. hunger), I should eat, and I should eat until I literally didn’t want any more food at all (ie. satiety/fullness). She assured me I would not get fat doing this. I would reach my healthy, sustainable weight.

Justina’s encouragement and advice was unbelievably helpful. I needed this permission to eat freely without waiting for a growling belly, or some other definite physical cue of hunger, and to truly eat as much as I needed to feel completely satisfied, even if it seemed like a ton of food. I trusted her because I knew she understood my anxieties and had faced them and overcome them herself. Within days of our call, I started implementing some of the changes she had suggested.

Reducing veggies literally changed my gut (and life) within days. I am now down to less than 2lbs of veggies per day (mostly cooked) and feel soooo much better. I sometimes have meals with only starch and this has helped my IBS symptoms to calm down to a very manageable (sometimes almost non-existent) level most days. My anxiety about eating is lessening and I feel like I’m over the worst of the weeks of discomfort and uncertainty. I no longer eat large amounts of food at night, and my sleep and gut have improved markedly since I began eating most of my calories early in the day.

Finding Justina was an answer to prayer. What I love about Justina is that she understands that freedom from eating disturbances/imbalances comes only when one eats the right foods (aka whole food, plant based), AND when we respect and honor the natural hunger drive that is inherent in each person. The fact that she understands and empathizes with HCNC’s since she is one herself is also invaluable! I have no doubt she understands my fears of weight gain, my perfectionism, my anxiety, and my neurotic worrying about details.

Justina is so non-judgmental and empathetic and generous with her time and knowledge. You can tell how passionate she is about helping others find balance and freedom with food in their lives. I will forever be grateful for the role she has played in helping me find balance. She is a voice of reason and reassurance. I am still a work in progress, but I have no doubt I am moving in the right direction, and I feel at ease knowing I can contact Justina any time I need a dose of reality and/or insight.
